Preparation
- Preheat the air fryer to 400°F.
- Toss diced potatoes with olive oil, salt, and pepper in a bowl.
- Air fry the potatoes for 16–18 minutes, shaking halfway through for even crispiness.
- While the potatoes fry, heat a skillet over medium-low heat with a little olive oil.
- Add diced onions and cook for 10–15 minutes, stirring occasionally until they soften and turn golden.
- Remove onions from the skillet and set aside.
Cooking
- Increase the heat to medium-high and add ground beef to the skillet.
- Break up the meat while pressing it into the pan to achieve crispy edges.
- Cook for 5–7 minutes or until the beef is browned. Season with salt and pepper, draining excess fat if needed.
- In a small bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until smooth.
Assembly
- To assemble, add crispy potatoes to bowls, topping with beef, caramelized onions, and shredded cheese.
- Drizzle with the special sauce and finish with lettuce and optional toppings.
