Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a medium bowl, combine the all-purpose flour, softened butter, and powdered sugar. Mix until the texture resembles coarse crumbs.
  3. Press this mixture firmly into the bottom of the prepared baking dish to create the crust.
Making the Filling
  1. In another bowl, mix the chopped rhubarb with granulated sugar, cornstarch, lemon juice, and egg. Stir until well combined.
  2. Pour the rhubarb mixture over the crust in the baking dish, spreading it evenly.
Baking
