  • 3 cups old-fashioned rolled oats Use certified gluten-free oats if necessary.
  • 3/4 cup natural peanut butter Choose a smooth variety for easy mixing.
  • 1/3 cup honey or maple syrup Both work, but honey can help with binding.
  • 1/2 cup mini chocolate chips Optional for a touch of sweetness.
  • 2 whole eggs For binding; can substitute with a flax egg for a vegan option.
  • 1 pinch salt Omit if using salted peanut butter.
Optional Add-ins
  • as desired walnuts, pecans, almonds, chia seeds, sunflower seeds, pumpkin seeds, or dried fruit Customize to your taste.

Preparation
  1. Preheat your oven to 350℉.
  2. In a large mixing bowl, combine all ingredients and mix thoroughly.
  3. If your peanut butter is thick, warm it in the microwave for about 10-15 seconds to make it easier to stir.
  4. Line a 9x9-inch baking dish with parchment paper for easy removal after baking.
  5. Pour the mixture into the prepared baking dish.
  6. Press the mixture firmly into an even layer; this will help the bars stick together and maintain their shape.
  7. If you choose to use chocolate chips, sprinkle them on top and gently press them into the mixture.
  8. Bake for 15-17 minutes or until the center is set and the edges are slightly golden. Start checking around 14 minutes, as baking times can vary.
  9. Once baked, remove from the oven and transfer the pan to a cooling rack.
  10. Allow the bars to cool completely in the pan before cutting them into 16 squares with a sharp knife.

Notes

Store in an airtight container in the fridge for up to a week or at room temperature for 3-4 days. For longer storage, freeze in a single layer for up to 3 months.
