Quesadilla Filling
  • 1 cup fresh spinach, chopped Fresh spinach adds color and nutrients.

  • 1/2 cup crumbled feta cheese Provides a tangy flavor that complements the quesadillas.
  • 1 small tomato, diced Adds a fresh burst of flavor.
  • 1/4 cup red onion, thinly sliced Brings a slight crunch and sharpness.
  • 1 tablespoon olive oil Ensures the quesadillas crisp up nicely.
  • black pepper, to taste Enhances the overall flavor of the filling.
For Assembling
  • 4 pieces flour tortillas Use medium-sized ones for easier handling.

Method
 

Preparation
  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir until well mixed.
Cooking
  1. Lay one tortilla flat on a clean surface, and place one-fourth of the filling mixture onto half of the tortilla.
  2. Fold the tortilla over to cover the filling completely.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Once the oil is hot, place the filled tortilla in the skillet.
  5. Cook for 3-4 minutes until the bottom is golden brown.
  6. Carefully flip the tortilla and cook for an additional 3-4 minutes until both sides are crispy.
  7. Remove from heat, slice into wedges, and serve warm.

Notes

For a complete meal, serve with homemade tzatziki or a refreshing Greek salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
