- In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir until well mixed.
Cooking
- Lay one tortilla flat on a clean surface, and place one-fourth of the filling mixture onto half of the tortilla.
- Fold the tortilla over to cover the filling completely.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Once the oil is hot, place the filled tortilla in the skillet.
- Cook for 3-4 minutes until the bottom is golden brown.
- Carefully flip the tortilla and cook for an additional 3-4 minutes until both sides are crispy.
- Remove from heat, slice into wedges, and serve warm.
Notes
For a complete meal, serve with homemade tzatziki or a refreshing Greek salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
