Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).

  3. Shape the mixture into meatballs and arrange them on a baking sheet.
  4. In another bowl, toss the cubed potatoes with olive oil, salt, and pepper. Spread them out on a separate baking sheet.
Cooking
  1. Bake both the meatballs and potatoes in the oven for 20-25 minutes or until they are cooked through and golden brown.
Salad Assembly
  1. Combine cherry tomatoes, diced cucumber, sliced red onion, crumbled feta cheese, mixed greens, red wine vinegar, and lemon juice in a bowl. Toss everything together.
Serving
  1. Place roasted potatoes and meatballs in a bowl, adding the Greek salad on the side.
