Preparation
  1. In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper.
  2. Coat the chicken breasts thoroughly in the marinade.
  3. Let the chicken sit for at least 30 minutes to absorb the flavors.
  4. Prepare rice according to package directions.
  5. Once rice is fluffy and tender, set it aside to cool.
Cooking
  1. Heat your grill or skillet over medium heat.
  2. Cook marinated chicken for about 6-7 minutes on each side until browned and fully cooked.
  3. Let the chicken rest before slicing it into strips.
Assembly
  1. In a large bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream.
  2. Gently fold everything together until well mixed and creamy.
  3. On serving plates, spoon a generous scoop of the creamy avocado rice.
  4. Top with sliced honey lime chicken and drizzle extra lime juice on top.
