Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Cheesecake Filling
  1. In another bowl, beat the softened cream cheese and powdered sugar until smooth to create the cheesecake filling.
Assembly
  1. Spoon a tablespoon of cookie dough and flatten it in your palm. Place a small dollop of the cheesecake filling in the center.
  2. Wrap the dough around the filling and roll it into a ball.
