  1. Start by heating the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onions become translucent.
  3. Season the chicken with cumin, paprika, salt, and pepper to enhance flavors.
  4. Add the seasoned chicken to the pot and brown it on both sides for added depth.
  5. Stir in the rice, chicken broth, drained black beans, and diced red bell pepper into the pot.
  6. Bring the mixture to a rolling boil, then reduce the heat to low and cover with a lid.
  7. Allow it to simmer for about 20-25 minutes or until the rice is tender and the chicken is cooked through.
  8. Once done, fluff the rice gently with a fork and garnish with chopped cilantro before serving.

Notes
