- Rinse the blueberries well and place them in a bowl.
- Mash about half of the blueberries with a fork, leaving the rest whole.
- Stir in 4 tablespoons of maple syrup and a pinch of salt.
- Let the mixture sit at room temperature for about 10 minutes to release juices.
- In a separate bowl, combine rolled oats, chia seeds, and a pinch of salt.
- Whisk together water or milk, Greek yogurt, and vanilla extract in another bowl.
Mixing
- Pour the wet mixture over the dry ingredients and stir until combined.
- Add the blueberry mixture on top of the oats and fold gently.
Refrigeration
- Cover the bowl tightly and refrigerate overnight or for at least 4-6 hours.
- In the morning, give the oats a good stir before serving.
Notes
For best results, use old-fashioned rolled oats and adjust sweetness based on taste. Perfect for meal prep and keeps well in the fridge.
